Avocado, originally from Mexico, produces a rich, fleshy fruit that plays a key role in Mexican cooking. The leaves of the avocado tree are also used in various ways, especially in the cuisines of Oaxaca, Chiapas, and Puebla. They can be used fresh, dried, or ground into a powder. Their flavour is similar to that of the fruit but sweeter, with a light anise note. Avocado leaves are commonly used in marinades, stews, and sauces, and they can also replace epazote in soups and stews. In Mexican tradition, they are often used as an infusion for their mild pain-relieving properties. They’re perfect in tamales, quesadillas, mixiotes, lamb dishes, and hearty stews.
